Healthy Pancakes

Like most women, body image is a huge, inconvenient part of my life. Now, don't get me wrong, I'm FAR from vein! I will gladly go out bare faced and with my hair looking as though I'd been dragged through a hedge backwards, but when it comes to my weight, there's something in my brain telling me that I NEED to lose it and I need to lose it fast! I never used to be like this, in fact I would regularly sit with a huge wedge of cake or a massive pizza and think to myself 'you only live once', but as I've gotten older I've fallen more and more out of love with my body and I desperately want to find my 'zen' again. Everyones weight and image is a personal choice, you know you're truly at your best when you feel completely happy and confident within yourself and with what you've got, no matter what size you are! My obsession with weight loss isn't born out of vanity, but simply for a want of happiness.

 

 

Dieting is EXTREMELY difficuilt, in fact it's hell, especially if you're like me and have the appitite of a horse! One of my greatest weaknesses is food, I want it all the time, especially the sweet stuff. This is probably one of the hardest realities I've to come to terms with in dieting, your inability to fill yourself with a pudding after every meal. There are, however, healthy deserts out there, most of which taste like crap, but this one is simply amazing! Now I can't take the credit for this, I discovered in through Blogilates, a free, online series of Pilates workouts taught by Cassey Ho, who shares her 'clean eats' recipes to aid people when they're dieting. I would highly reccomend you check her out, without a doubt, she's one of the most motivational and inspiring fitness guru's on the web. For now though, lets get on with the pancakes...

 
 

Serves: Makes 4 pancakes Calories: 248

 

Ingredients

1 Banana

2 Eggs

2 tsp Olive oil/coconut oil (or any other healthy alternative)

 

 

Method

1. Mash up the banana in a bowl, making sure you've gotten rid of most of the lumps. Crack the eggs in and whisk.

 

 

2. In a frying pan, heat the oil on a high heat for 1-2 minutes. Pour the mixture into the pan. Flip when the flat side down has goldened.

 

 

3. Once both sides are golden, serve and enjoy!

You can top the pancakes with anything you like but keep it heatly, I like to top mine with fruit.
